The Forno Allegro by Alfa Pizza is the largest oven in Alfa Pizza's FORNINOX range. Its dimensions and technical features recall a professional oven. It has been designed to meet the daily requirements of both family and a large number of friends. Besides the shelf made of refractory tiles, the stainless steel dome and ceramic fibre insulation, Allegro is fitted with large concealed lateral shelves, a food warming compartment and a wood storage shelf. The table top version brings you the same detailed build, without the base underneath. Allegro carries the art of a wood-fired kitchen to another level. Includes: flue, chimney, pyrometer, base and door.

Features: Cooking Chamber; made of nickel free stainless steel, the best solution for ultra-high temperatures. Insulation; all Alfa Pizza ovens are insulated with ceramic refractory fiber, giving them excellent thermal insulation and resistance to heat. Door; every oven is equipped with a door which allows for optimum temperature control. Some of them come with a glass ceramic window heat resistant up to 800 degrees, so you can check the cooking even when the door is closed. Coating; a double layer dust coating is heat and weather resistant. Self Cleaning; the pyrolysis effect is a process in which, when the oven is heated to 500 degrees centigrade, cooking residues are elimated, hygienizing the internal of the oven. Certification; our products are tested to UNI 10474, EN13229 and CE standards, guaranteeing the highest safety requiremenets foreseen by the strictest international regulations.

Top Tips To heat your Pizza Oven, make a castle of dry wood in the centre and light, leave for 15-20 minutes to reach desired temperature, move wood to one side then add your food! To maintain heat of 300°-350°C (ideal for direct cooking eg Pizzas), add one log every 10 minutes. To maintain heat of 200°-250°C (ideal for indirect cooking eg Meat, Veg and Bread), add one log every 15-20 minutes. You can also use the door to reduce temperature (by opening) or increase temperature (by closing).
